Hello! How are you? Hope you are doing well! A few days ago, my son wanted to make some pancakes with me. As I have all the time in the world;-) (in between the feeds and napping changing sessions), I politely obliged. To be fair, they don’t take that much time. I mean the very basic pancakes. Eggs, flour, milk, sugar – mixed them all together and the batter was ready.  As I added a spoonful of vanilla essence to the slushy batter, suddenly I was caught up with emotions. The essence swaddled me and took me back to some known territory. A familiar place, a fond place with that beautiful sweet fragrance of the vanilla essence. The sweet pancake batter, the sound that the spoon made against the bowl, the swirling motion which went deeper and deeper. Layers and layers of faded memories began to reveal themselves.

To be honest, while growing up, cake was not the commonly made food item in our household. I would hear the recipe from someone, would try it out myself and hope for the best. The best part of making cakes was the batter. My brother and I used to be ever ready for tasting it. One swirling action meant one round of tasting the batter with the anticipation that with one more movement of the spoon, the river of taste would take a new course. However, there was a twist in our cake making process.  It was very interesting. Possibly unfathomable for some. Can you guess the most interesting element in the process? It was quite unique. We didn’t even have an oven. The most basic requirement – the equipment to bake a cake. We used to make cakes in a pressure cooker! As they say, where there is a will, there is a way.  However, the cake would come out white and flat. Almost every time! With so many white and flat cakes under my belt, neither it discouraged me to make another lot nor it encouraged me to make the best cakes in the future. Now-a-days, my cakes turn out ok. Isn’t it? (For the people who have seen and tasted them).  And in one such swirling action of the spoon, the present day me suddenly thought, ‘ah I could have made pancakes.’
